- 400 g frozen mixed vegetables
- 400 ml coconut milk
- 2 tbsp curry powder
- 1 onion
- 2 clove garlic
- 1 tbsp ginger
- 1 tbsp olive oil
- salt — to taste
- black pepper — to taste
- 400 g cooked brown rice
