- 1 cup green lentils
- 2 carrot
- 2 potato
- 1 onion
- 1 cup canned diced tomatoes
- 2 clove garlic
- 4 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoon vegetable oil
- 1 teaspoon dried thyme
- 1 bay leaf
Instructions

Rinse the green lentils under cold water and set aside.

Peel and dice the carrots, potatoes, and onion. Mince the garlic cloves.

In a large pot, heat vegetable oil over medium heat. Add the onion and garlic, and sauté until the onion is soft.
