  • 1 cup green lentils
  • 2 carrot
  • 2 potato
  • 1 onion
  • 1 cup canned diced tomatoes
  • 2 clove garlic
  • 4 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon vegetable oil
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

    Rinse the green lentils under cold water and set aside.

    Peel and dice the carrots, potatoes, and onion. Mince the garlic cloves.

    In a large pot, heat vegetable oil over medium heat. Add the onion and garlic, and sauté until the onion is soft.

    Add the diced carrots and potatoes to the pot and stir for 2 minutes.

    Stir in the canned diced tomatoes, dried thyme, and bay leaf.

    Add the rinsed lentils and water to the pot. Stir in salt and black pepper.

    Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for about 15 minutes, or until the lentils and vegetables are tender.
