- 1.5 kg rack of lamb
- 2 tablespoons fresh rosemary
- 2 tablespoons fresh thyme
- 4 cloves garlic
- 3 tablespoons olive oil
- salt — to taste
- black pepper — to taste
- 3 tablespoons honey
- 500 g carrots
- 2 tablespoons butter
- 2 tablespoons fresh parsley
- 2 teaspoons lemon juice

Preheat the oven to 200°C (390°F).

Finely chop the rosemary, thyme, and garlic. In a small bowl, mix them with 2 tablespoons of olive oil, salt, and black pepper.

Pat the rack of lamb dry with paper towels. Rub the herb mixture evenly over the lamb, pressing gently to adhere.

Heat 1 tablespoon of olive oil in a large oven-safe pan over medium-high heat. Sear the lamb on all sides until browned, about 5 minutes.
