- 600 g salmon fillet
- 1 cup quinoa
- 2 cups water
- 200 g cherry tomatoes
- 1 cucumber
- 1 avocado
- 100 g spinach
- 1 lemon
- 2 tbsp olive oil
- salt — to taste
- black pepper — to taste

Rinse the quinoa under cold water and add it to a pot with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until water is absorbed and quinoa is fluffy.

While the quinoa cooks, heat 1 tablespoon of olive oil in a pan over medium-high heat. Season the salmon fillet with salt and pepper, then sear it in the pan, skin-side down, for about 4-5 minutes per side until cooked through and flaky.

Chop the cherry tomatoes in half, dice the cucumber, and slice the avocado. Set aside.

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, avocado, and spinach. Drizzle with the juice of one lemon and the remaining tablespoon of olive oil. Season with salt and pepper.
