- 1 cup coconut milk
- 1 onion
- 3 cloves garlic
- 1 tablespoon ginger
- 2 tablespoons curry powder
- 4 cups spinach
- 1 tablespoon olive oil
- salt — to taste
- black pepper — to taste
- 1 lime
- 1 cup cilantro
