- 2 tbsp olive oil
- 1 onion
- 3 cloves garlic
- 1 tbsp ginger
- 1 tbsp curry powder
- 400 ml coconut milk
- 150 g spinach
- salt — to taste
- black pepper — to taste
- 0.5 lemon
- 2 cups rice
