Ingredients

  • 500 g tempeh
  • 2 tbsp olive oil
  • 1 onion
  • 3 cloves garlic
  • 1 tbsp ginger
  • 1 tbsp curry powder
  • 400 ml coconut milk
  • 150 g spinach
  • salt — to taste
  • black pepper — to taste
  • 0.5 lemon
  • 2 cups rice

Instructions

    Cook the rice according to package instructions.

    Cut the tempeh into bite-sized cubes.

    Heat olive oil in a large pan over medium heat.
