Ingredients

- 500 g chicken breast
- 3 tbsp Panang curry paste
- 400 ml coconut milk
- 2 tbsp peanut butter
- 1 tbsp brown sugar
- 2 tbsp fish sauce
- 1 lime
- 1 red bell pepper
- 200 g broccoli
- 1 tbsp vegetable oil
- 100 ml water
- 250 g jasmine rice
- Thai basil — to taste
- salt — to taste

Rinse the jasmine rice under cold water. Cook according to package instructions.

While rice is cooking, slice the chicken breast into thin strips. Set aside.

Heat vegetable oil in a large pan over medium heat. Add the Panang curry paste and stir-fry for 1-2 minutes until fragrant.

Add chicken strips to the pan and cook until they are no longer pink on the outside, about 3-4 minutes.

Stir in peanut butter, brown sugar, fish sauce, coconut milk, and water. Bring to a simmer.

Slice the red bell pepper and cut the broccoli into bite-sized pieces. Add them to the curry sauce and simmer for another 5-7 minutes until vegetables are tender.

Squeeze lime juice into the curry and adjust seasoning with salt to taste.

Garnish with Thai basil and serve with cooked jasmine rice.
