Ingredients

  • 1 cup quinoa
  • 1 pound shrimp
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 cup frozen green peas
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 2 green onions
  • 1 lime
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups water and a pinch of salt. Bring to a boil, reduce heat to low, and cover. Cook for 15 minutes or until water is absorbed and quinoa is fluffy.

    While quinoa cooks, peel and devein shrimp. Rinse under cold water and pat dry with paper towels.

    Cut red bell pepper into thin strips and mince garlic cloves.
