Ingredients

For 4 servings

  • 600 g ground turkey
  • 4 bell pepper
  • 2 tbsp olive oil
  • 1 onion
  • 2 clove garlic
  • 400 g canned diced tomatoes
  • 100 g cheddar cheese
  • 1 tsp Italian seasoning
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

    Preheat oven to 200°C (392°F).

  2. 2

Cut the bell peppers in half lengthwise and remove seeds and membranes.

  3. 3

Place bell pepper halves upside down on a baking sheet and brush with 1 tbsp olive oil. Bake in preheated oven for 10 minutes.

  4. 4

Meanwhile, heat 1 tbsp olive oil in a skillet over medium heat. Dice the onion and mince the garlic, then add to the skillet. Sauté until onion is translucent.

  5. 5

Add ground turkey to the skillet, cook, and stir until browned. Drain excess fat if necessary.

  6. 6

Stir in diced tomatoes, Italian seasoning, salt, and black pepper. Simmer for 5 minutes to blend flavors.

  7. 7

Remove bell peppers from the oven, turn right side up, and fill each with the turkey mixture.

  8. 8

Sprinkle cheddar cheese evenly over the stuffed peppers.

  9. 9

Return to the oven and bake for another 5 minutes, or until cheese is melted and bubbly.

  10. 10

    Serve warm and enjoy.
