Ingredients

  • 1 cup green lentils
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 onion
  • 2 carrot
  • 1 cup frozen peas
  • 2 cloves garlic
  • 2 tablespoons soy sauce
  • ground black pepper — to taste
  • salt — to taste

Instructions

    Rinse the green lentils under cold water. In a medium saucepan, combine the lentils and water, bring to a boil, then reduce the heat and simmer for 15 minutes or until tender. Drain and set aside.

    While the lentils are cooking, dice the onion, peel and slice the carrots, and finely chop the garlic.
