Ingredients

For 4 servings

  • 500 g pork loin
  • 2 tablespoon olive oil
  • 2 avocado
  • 200 g mixed salad greens
  • 200 g cherry tomatoes
  • 1 cucumber
  • 2 tablespoon lemon juice
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Preheat a large pan over medium-high heat and add 1 tablespoon of olive oil.

  2. 2

Season the pork loin with salt and black pepper, then add to the pan.

  3. 3

Cook the pork loin for 4-5 minutes on each side until fully cooked and reaches an internal temperature of 145°F (63°C).

  4. 4

While the pork is cooking, slice the avocados, halve the cherry tomatoes, and slice the cucumber.

  5. 5

In a large bowl, combine the mixed salad greens, cherry tomatoes, and cucumber slices.

  6. 6

Remove the pork loin from the pan, let it rest for a few minutes, then slice it thinly.

  7. 7

Dress the salad with the remaining 1 tablespoon of olive oil and lemon juice, then toss to coat evenly.

  8. 8

Divide the salad among four bowls, top with sliced pork loin and avocado.

  9. 9

Season with additional salt and black pepper to taste, if desired.
