Ingredients

- 1.5 cups green lentils
- 2 tablespoons olive oil
- 1 onion
- 2 carrot
- 2 celery stalk
- 3 cloves garlic
- 6 cups vegetable broth
- 1 14 oz can canned diced tomatoes
- 2 red potato
- 4 cups spinach
- 1 cup plain yogurt
- salt — to taste
- black pepper — to taste
- 2 bay leaf
- 1 teaspoon thyme

Rinse the green lentils under cold water and set aside.

Chop the onion, carrots, celery, and red potatoes into bite-sized pieces.

Mince the garlic cloves.

In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until the vegetables are softened, about 8 minutes.
