  • 2 cups canned black beans
  • 1 cup frozen corn
  • 0.5 red onion
  • 0.5 cup all-purpose flour
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 lime
  • 2 tablespoons cilantro

Instructions

    Drain and rinse the black beans and place them in a large bowl. Mash slightly with a fork, leaving some whole beans for texture.

    Chop the red onion finely and add it to the bowl with the mashed beans.

    Add the frozen corn (no need to defrost), all-purpose flour, cumin, smoked paprika, baking powder, garlic powder, salt, and black pepper to the bowl. Mix until well combined.

    Form the mixture into roughly 8 fritters.

    Heat olive oil in a non-stick skillet over medium heat. Once hot, add the fritters to the pan in batches if necessary.
