Ingredients

  • 800 g salmon fillet
  • 2 cups brown rice
  • 1 cucumber
  • 1 cup edamame
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • salt — to taste
  • black pepper — to taste
  • 1 lemon
  • 2 green onion

    Preheat oven to 200°C (390°F).

    Cook the brown rice according to package instructions and set aside.

    Place salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and black pepper.

    Bake the salmon in the oven for 15-20 minutes or until it flakes easily with a fork.
