Ingredients
For 4 servings
- 2 chicken breast
- 1.5 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 2 tablespoon olive oil
- 1.5 cup long grain white rice
- 3 cup water
- 0.5 bunch cilantro
- 1 lime
- 1 can canned black beans
- 1 onion
- 2 tomato
- 1 avocado
- 1 cup shredded cheddar cheese
Instructions
- 1
Season chicken breasts with 1 teaspoon salt, black pepper, ground cumin, and garlic powder.
- 2
Heat 1 tablespoon olive oil in a pan over medium heat, and grill the chicken breasts for about 6-7 minutes on each side or until cooked through. Remove from heat, let rest, then slice.
- 3
While the chicken is cooking, rinse the rice under cold water until the water runs clear.
- 4
In a pot, bring 3 cups of water to a boil. Add 0.5 teaspoon salt and rice. Cover, reduce the heat to low, and simmer for 18-20 minutes until the rice is tender.
- 5
Chop cilantro and juice the lime. Fluff the cooked rice with a fork, then stir in chopped cilantro and lime juice.
- 6
In a small pot, heat the black beans over medium heat until warm.
- 7
Dice the onion and tomatoes. Halve the avocado and remove the pit. Slice the avocado.
- 8
Assemble each bowl with a base of cilantro-lime rice, topped with sliced grilled chicken, warm black beans, diced onion, tomatoes, sliced avocado, and a sprinkle of shredded cheddar cheese.
