Ingredients

  • 2 tablespoon olive oil
  • 1 onion
  • 2 bell pepper
  • 3 clove garlic
  • 28 ounce canned crushed tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt — to taste
  • black pepper — to taste
  • 8 ounce mushroom
  • 1 bay leaf
  • 2 tablespoon fresh parsley

Instructions

    Heat olive oil in a large pot over medium-high heat.

    Season chicken thighs with salt and black pepper, then brown them in the pot on all sides. Remove chicken and set aside.

    In the same pot, add chopped onion, sliced bell peppers, and minced garlic. Sauté until onions are translucent.
