- 2 tablespoons olive oil
- 1 red bell pepper
- 1 onion
- 2 cups kale
- 2 cloves garlic
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt

- 4 eggs
- 1 lime
- 0.5 cup cilantro

Rinse and drain the black beans if using canned.

Dice the red bell pepper and onion, and roughly chop the kale. Mince the garlic.

Heat olive oil in a large skillet over medium heat. Add the onions and red bell peppers, sauté until softened, about 5 minutes.
