Ingredients
For 4 servings
- 600 g ground turkey
- 800 g cauliflower florets
- 2 tablespoon olive oil
- 2 clove garlic
- 1 onion
- 1 cup chicken broth
- salt — to taste
- black pepper — to taste
- 2 tablespoon butter
- 1/4 cup parsley
Instructions
- 1
Chop the cauliflower into florets and steam in a pot with 1 cup of chicken broth until tender, about 10 minutes.
- 2
While the cauliflower is cooking, finely chop the onion and mince the garlic.
- 3
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until fragrant, about 2-3 minutes.
- 4
Add the ground turkey to the skillet and cook, breaking it up with a spatula until browned and cooked through, about 6-8 minutes. Season with salt and black pepper to taste.
- 5
Once the cauliflower is tender, drain any excess liquid and transfer it to a mixing bowl. Add the butter, 1 tablespoon of olive oil, salt, and black pepper, then mash until smooth and creamy.
- 6
Serve the turkey over a bed of cauliflower mash, garnished with freshly chopped parsley.
