- 1 can, drained and rinsed chickpeas
- 1 whole, sliced red bell pepper
- 1 whole, sliced zucchini
- 2 whole, julienned carrot
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 2 cloves, minced garlic
- 2 tablespoons soy sauce
- 1 cup plain yogurt
- 2 tablespoons white miso paste
- 1 tablespoon lemon juice
- 1 tablespoon, chopped fresh parsley

In a small bowl, mix the plain yogurt, white miso paste, lemon juice, and a pinch of salt and pepper. Stir until smooth and set aside.

Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
