Ingredients

  • 1 can, drained and rinsed chickpeas
  • 1 whole, sliced red bell pepper
  • 1 whole, sliced zucchini
  • 2 whole, julienned carrot
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 cloves, minced garlic
  • 2 tablespoons soy sauce
  • 1 cup plain yogurt
  • 2 tablespoons white miso paste
  • 1 tablespoon lemon juice
  • 1 tablespoon, chopped fresh parsley
  • to taste salt
  • to taste black pepper

Instructions

    In a small bowl, mix the plain yogurt, white miso paste, lemon juice, and a pinch of salt and pepper. Stir until smooth and set aside.

    Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add the sliced red bell pepper, zucchini, julienned carrots, and broccoli florets to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
