- 4 cups spinach
- 1 cup coconut milk
- 1 onion
- 4 cloves garlic
- 1 inch ginger
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1/2 teaspoon chili powder
- 2 tablespoons vegetable oil
- salt — to taste
- 4 cups water
- 1/4 cup cilantro
Instructions

Rinse the red lentils under cold water until the water runs clear.

In a large pot, heat the vegetable oil over medium heat. Add cumin seeds and toast until fragrant, about 30 seconds.
