  • 4 bell pepper
  • 1 cup brown rice
  • 1 15-ounce can black beans
  • 1 onion
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • black pepper — to taste
  • 1 cup cheddar cheese
  • 0.25 cup fresh cilantro

Instructions

    Preheat oven to 375°F (190°C).

    Cook brown rice according to package instructions.

    Halve the bell peppers lengthwise and remove the seeds and membranes.

    Place the pepper halves cut-side up on a baking sheet and bake for 10 minutes.
