Ingredients

For 4 servings

  • 500 g chicken breast
  • 60 g cornstarch
  • 2 tbsp vegetable oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 200 g pineapple chunks
  • 2 tbsp soy sauce
  • 100 g ketchup
  • 3 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 2 cloves garlic
  • 1 tbsp ginger
  • 200 ml water
  • 4 cups cooked white rice

Instructions

    Cut the chicken breast into bite-sized pieces and coat with 30g of cornstarch.

    In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.

    Add the chicken pieces to the skillet, cooking until golden brown and cooked through, about 8-10 minutes. Remove and set aside.

    Dice the red and green bell peppers and slice the onion.

    In the same skillet, heat the remaining 1 tablespoon of vegetable oil.

    Add the garlic and ginger, sautéing for 1 minute until fragrant.

    Add the bell peppers and onion, cooking for 5 minutes until softened.

    Add the pineapple chunks to the skillet.
