  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 4 cloves garlic
  • 3 tablespoons Dijon mustard
  • 1 cup panko breadcrumbs
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup fresh mint
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • 1 cup Parmesan cheese
  • 1/2 cup parsley

    Preheat the oven to 450°F (230°C).

    Pat the racks of lamb dry with paper towels and season with salt and pepper.

    Mix rosemary, thyme, and garlic in a food processor until finely chopped.

    Mix the herb mixture with panko breadcrumbs and 2 tablespoons of olive oil in a bowl.

    Brush Dijon mustard over lamb racks.
