Ingredients
For 4 servings
- 3 sweet potato
- 2 can tuna
- 1 onion
- 2 clove garlic
- 1 cup frozen peas
- 1 cup cheddar cheese
- 1 cup milk
- 3 tablespoon butter
- 3 tablespoon all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- 1
Preheat the oven to 375°F (190°C).
- 2
Peel and cube the sweet potatoes, then boil them in a pot of salted water for 15-20 minutes until tender. Drain and set aside.
- 3
While the sweet potatoes are cooking, finely chop the onion and garlic.
- 4
In a skillet, heat olive oil over medium heat and sauté the onion and garlic until softened, about 5 minutes.
- 5
Add the butter to the skillet. Once melted, stir in the flour and cook for 1-2 minutes.
- 6
Gradually whisk in the milk to create a smooth sauce. Cook until thickened, about 5 minutes.
- 7
Stir in the frozen peas, drained tuna, salt, and black pepper. Mix well and remove from heat.
- 8
Mash the sweet potatoes with a fork or potato masher until smooth.
- 9
In a large baking dish, spread a layer of mashed sweet potatoes, followed by the tuna mixture, and top with another layer of sweet potatoes.
- 10
Sprinkle cheddar cheese evenly over the top of the casserole.
- 11
Bake in the preheated oven for 25-30 minutes until the cheese is golden brown and bubbly.
- 12
Let cool for a few minutes before serving.
