  • 1 pound chicken thigh
  • 2 tablespoon olive oil
  • 1 yellow onion
  • 2 clove garlic
  • 1 red bell pepper
  • 14.5 ounce canned diced tomatoes
  • 2 cup chicken broth
  • 1 cup long grain white rice
  • 1 cup frozen corn
  • 15 ounce canned black beans
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup cilantro

Instructions

    Dice the yellow onion and red bell pepper, and mince the garlic cloves.

    Cut the chicken thighs into bite-sized pieces, seasoning with salt and black pepper.

    Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove and set aside.
