  • 2 cups water
  • 4 potato
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • salt — to taste
  • black pepper — to taste
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley

    Preheat the oven to 425°F (220°C).

    Rinse the red lentils under cold water until the water runs clear. Combine them with 2 cups of water in a saucepan and bring to a boil. Reduce heat to simmer and cook for about 10 minutes until tender. Drain any excess water.
