Ingredients

  • 400 grams prawns
  • 200 grams rice noodles
  • 1 red bell pepper
  • 1 carrot
  • 4 green onion
  • 3 cloves garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Boil water in a large pot and cook the rice noodles according to package instructions. Drain and set aside.

    While noodles cook, prepare the vegetables: slice the red bell pepper and carrot into thin strips, and chop the green onions. Mince the garlic.

    In a large frying pan or wok, heat the olive oil over medium-high heat. Add the prawns and cook for 3-4 minutes until pink and cooked through. Remove and set aside.

    In the same pan, add the sesame oil, garlic, red bell pepper, and carrot. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

    Return the prawns to the pan, add the cooked noodles, soy sauce, and half of the green onions. Toss everything together for 2 minutes to combine and heat through. Season with salt and black pepper to taste.
