Ingredients

For 4 servings

  • 2 rack of lamb
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 4 cloves garlic
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 8 carrot
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Preheat the oven to 375°F (190°C).

  2. 2

Finely chop the rosemary, thyme, and garlic.

  3. 3

In a small bowl, mix the chopped herbs and garlic with 2 tablespoons of olive oil, salt, and pepper.

  4. 4

Rub the herb mixture evenly over the lamb racks.

  5. 5

Place the lamb on a roasting pan and let it sit at room temperature for 30 minutes.

  6. 6

Peel and cut the carrots into 3-inch sticks.

  7. 7

Place carrots in a baking dish, drizzle with 1 tablespoon of olive oil and honey, and season with salt and pepper.

  8. 8

Roast the lamb in the oven for 25-30 minutes for medium-rare, adjusting time for other desired doneness.

  9. 9

Simultaneously, roast the carrots for 25-30 minutes until tender and caramelized.

  10. 10

Remove lamb from the oven, cover with foil, and let it rest for 10 minutes before carving.

  11. 11

Serve the carved lamb with honey-glazed carrots.
