Ingredients

For 4 servings

  • 400 g tempeh
  • 2 tbsp olive oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 3 clove garlic
  • 300 g frozen mixed vegetables
  • 2 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • ground black pepper — to taste
  • 2 green onions

Instructions

    Cut the tempeh into small cubes.

    Heat 1 tbsp of olive oil in a large skillet over medium heat.

    Add the tempeh cubes and sauté for 5 minutes, stirring occasionally until golden brown.

    Dice the red and green bell peppers, and slice the red onion.

    Mince the garlic cloves.

    Remove the tempeh from the skillet and set aside.

    In the same skillet, add the remaining 1 tbsp of olive oil.

    Add the diced bell peppers, sliced red onion, minced garlic, and frozen mixed vegetables to the skillet.

    Cook for 5-7 minutes, stirring frequently, until vegetables are tender.

    Return the tempeh to the skillet.
