- 12 eggs
- 400 grams frozen mixed vegetables
- 2 russet potatoes
- 1 onion
- 2 cloves garlic
- 1 tablespoon olive oil
- salt — to taste
- black pepper — to taste
- 100 milliliters low-fat milk
- 50 grams grated parmesan cheese

Preheat the oven to 200°C (390°F).

Peel and dice the potatoes, then boil them in salted water for 10 minutes or until just tender. Drain and set aside.

While potatoes cook, dice the onion and mince the garlic.

Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until translucent, about 3 minutes.
