Ingredients

For 4 servings

  • 6 eggs
  • 1 avocado
  • 2 tablespoon mayonnaise
  • 1 tablespoon lime juice
  • 1 jalapeno
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoon cilantro

Instructions

  1. 1

Place eggs in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 10 minutes.

  2. 2

Remove eggs from heat and transfer to a bowl of ice water to cool for 5 minutes.

  3. 3

Peel the eggs and slice them in half lengthwise. Remove yolks and place them in a bowl.

  4. 4

Mash avocado in a bowl until smooth. Finely chop the jalapeno, removing seeds if less heat is desired.

  5. 5

Combine mashed avocado, egg yolks, mayonnaise, lime juice, chopped jalapeno, salt, and black pepper. Mix until smooth.

  6. 6

Spoon or pipe the avocado mixture back into the egg whites.

  7. 7

Sprinkle with paprika and garnish with chopped cilantro.

  8. 8

Serve immediately or refrigerate for up to 2 hours before serving.
