  • 1 cup dried kidney beans
  • 1.5 cups white rice
  • 1 14 oz can canned diced tomatoes
  • 1 onion
  • 1 carrot
  • 1 potato
  • 2 cloves garlic
  • 2 tablespoons vegetable oil
  • 4 cups water
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse and soak the dried kidney beans in water for at least 4 hours or overnight.

    In a large pot, heat vegetable oil over medium heat. Add chopped onion, minced garlic, diced carrot, and diced potato. Sauté until onions are translucent.
