Ingredients

- 1 cup green lentils
- 2 cups water
- 4 bell peppers
- 2 cups frozen mixed vegetables
- 1 onion
- 2 cloves garlic
- 1 cup canned diced tomatoes
- 1 teaspoon cumin
- 1 tablespoon olive oil
- salt — to taste
- black pepper — to taste

Rinse the green lentils under cold water. In a saucepan, combine lentils and water, bring to a boil, reduce to a simmer, cover, and cook for 15 minutes until tender.

Cut the tops off the bell peppers and remove seeds and membranes.
