Ingredients

  • 1 cup green lentils
  • 2 cups water
  • 4 bell peppers
  • 2 cups frozen mixed vegetables
  • 1 onion
  • 2 cloves garlic
  • 1 cup canned diced tomatoes
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the green lentils under cold water. In a saucepan, combine lentils and water, bring to a boil, reduce to a simmer, cover, and cook for 15 minutes until tender.

    While the lentils are cooking, preheat the oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove seeds and membranes.

    Chop the onion and garlic. In a skillet over medium heat, add olive oil and sauté onion and garlic for 3 minutes.
