  • 2 15 oz cans canned chickpeas
  • 2 tablespoon olive oil
  • 1 onion
  • 2 carrot
  • 2 celery stalk
  • 3 clove garlic
  • 4 cup vegetable broth
  • 1 15 oz can canned diced tomatoes
  • 4 cup spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

    Drain and rinse the chickpeas thoroughly under cold water.

    Chop the onion, carrots, and celery into small pieces; mince the garlic.
