- 1.5 cups green lentils
- 3 cups chicken broth
- 2 tablespoons olive oil
- 1 yellow onion
- 3 cloves garlic
- 2 carrot
- 1 red bell pepper
- 4 cups spinach
- 1 15-ounce can canned diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- salt — to taste
- black pepper — to taste
Instructions

Rinse the green lentils under cold water.

In a large skillet, heat olive oil over medium heat.

Dice the yellow onion and mince the garlic; add to the skillet and sauté until the onion becomes translucent.
