  • 2 cups white rice
  • 1 15 oz can canned chickpeas
  • 1 onion
  • 2 carrot
  • 1 cup frozen peas
  • 1 tablespoon curry powder
  • 2 tablespoons olive oil
  • salt — to taste
  • black pepper — to taste
  • 4 cups water

Instructions

    Rinse the rice in a sieve under cold water until the water runs clear.

    In a medium pot, heat 2 tablespoons of olive oil over medium heat.

    Chop the onion and carrots into small pieces.
