Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 300 grams smoked mackerel
  • 1 lemon
  • 3 tablespoons olive oil
  • 200 grams cherry tomatoes
  • 1 cucumber
  • 1 bunch fresh parsley
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the quinoa under cold water in a fine mesh sieve.

    In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the quinoa is fluffy.

    While the quinoa is cooking, flake the smoked mackerel into bite-sized pieces, removing any skin and bones.

    Juice the lemon, set aside.

    Halve the cherry tomatoes and dice the cucumber.
