Ingredients

For 4 servings

  • 2 avocado
  • 6 slices bacon
  • 1 head romaine lettuce
  • 1 lime
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Remove from skillet and drain on paper towels.

  2. 2

While the bacon cools, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.

  3. 3

Add the juice of one lime to the avocado and mash it with a fork until smooth. Season with salt and black pepper to taste.

  4. 4

Chop the cooled bacon into small pieces and mix it into the avocado mixture.

  5. 5

Separate the romaine lettuce leaves and wash them thoroughly. Pat dry.

  6. 6

Spoon the avocado and bacon mixture into the lettuce leaves to form small cups.

  7. 7

Serve the avocado and bacon salad cups immediately.
