Ingredients

- 1 cup quinoa
- 2 cups water
- 1 15 oz can chickpeas
- 1 cup broccoli
- 1 red bell pepper
- 1 carrot
- 1 zucchini
- 2 tablespoons olive oil
- 3 tablespoons soy sauce
- 1 teaspoon ginger
- 2 cloves garlic
- 2 green onion
- 1 tablespoon sesame seeds

Rinse quinoa under cold water, then combine with 2 cups of water in a saucepan. Bring to a boil, cover, and reduce heat to low. Simmer for 15 minutes or until water is absorbed, then fluff with a fork.

Drain and rinse chickpeas under cold water. Set aside.

Chop broccoli into florets, slice red bell pepper and carrot into thin strips, and cut zucchini into half-moons.

In a large pan over medium heat, add olive oil. Once hot, add minced garlic and grated ginger. Stir-fry for 1 minute.
