Ingredients

For 4 servings

  • 2 can (5 oz each) canned tuna
  • 2 eggs
  • 2 cup frozen mixed vegetables
  • 1/2 cup all-purpose flour
  • 2 green onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon olive oil

Instructions

    Drain the canned tuna and transfer to a large mixing bowl.

    Thaw the frozen mixed vegetables by microwaving on high for 2 minutes, then add to the bowl.

    Finely chop the green onions and add them to the bowl.

    Add the eggs, all-purpose flour, garlic powder, salt, and black pepper to the bowl and mix until well combined.

    Heat a tablespoon of olive oil in a large non-stick skillet over medium heat.

    Scoop 1/4 cup of the mixture for each fritter and place it in the skillet, flattening slightly with a spatula.
