Ingredients

  • 1 onion
  • 1 red bell pepper
  • 2 cups broccoli florets
  • 2 carrot
  • 3 cloves garlic
  • 1 can canned chickpeas
  • 2 tablespoons soy sauce
  • 2 cups cooked brown rice
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1/4 cup fresh parsley
  • salt — to taste

Instructions

    Heat olive oil in a large pan over medium heat.

    Chop the onion, red bell pepper, and carrots into bite-sized pieces.

    Add chopped onion, red bell pepper, and carrots to the pan and sauté for 5 minutes.
