Ingredients

  • 2 cans canned tuna
  • 1 can canned chickpeas
  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 red onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • salt — to taste
  • black pepper — to taste
  • 1 lemon
  • 1/4 cup fresh parsley

Instructions

    Rinse the rice under cold water until the water runs clear.

    In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and rice is tender.

    While the rice is cooking, drain and rinse the chickpeas and set aside.

    In a large skillet, heat the olive oil over medium heat. Add finely chopped red onion and sauté for 2-3 minutes until softened.
