Ingredients

- 2 cans canned tuna
- 1 can canned chickpeas
- 1 cup long-grain white rice
- 2 cups water
- 2 tablespoons olive oil
- 1 red onion
- 2 cloves garlic
- 1 red bell pepper
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- salt — to taste
- black pepper — to taste
- 1 lemon
- 1/4 cup fresh parsley

Rinse the rice under cold water until the water runs clear.

In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and rice is tender.
