Ingredients

For 4 servings

  • 600 grams pork loin
  • 1 cup quinoa
  • 4 cups spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • salt — to taste
  • black pepper — to taste
  • 1 lemon
  • 2 cups water
  • 2 tablespoons soy sauce

Instructions

    Rinse the quinoa under cold water. In a medium pot, bring 2 cups of water to a boil, add quinoa, reduce heat to low, cover, and cook for 15 minutes until water is absorbed.

    While quinoa cooks, cut pork loin into thin slices. Season with salt and pepper.

    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add pork slices and cook for 2-3 minutes per side until browned and cooked through. Remove from skillet and set aside.

    In the same skillet, add remaining 1 tablespoon of olive oil. Mince garlic and sauté for 30 seconds. Add spinach and cook until wilted, about 2 minutes. Season with a pinch of salt and pepper.
