Ingredients

For 4 servings

  • 500 g ground chicken
  • 1 cup breadcrumbs
  • 1/4 cup parmesan cheese
  • 1 egg
  • 2 clove garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 800 g canned crushed tomatoes
  • 1 tsp dried basil
  • 1 tsp sugar
  • 1 cup mozzarella cheese

Instructions

  1. 1

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

  2. 2

In a large bowl, combine ground chicken, breadcrumbs, parmesan cheese, egg, minced garlic, salt, black pepper, and oregano. Mix until well combined.

  3. 3

Form the mixture into approximately 16 meatballs and place them on the prepared baking sheet.

  4. 4

Drizzle olive oil over the meatballs and bake for 20 minutes or until golden and cooked through.

  5. 5

Meanwhile, in a saucepan, heat a tablespoon of olive oil over medium heat. Add canned crushed tomatoes, dried basil, sugar, and simmer gently for 10 minutes.

  6. 6

Transfer the baked meatballs to the marinara sauce, top with mozzarella cheese, and cover. Simmer for an additional 10 minutes until the cheese is melted and bubbly.

  7. 7

Serve the meatballs hot with extra parmesan cheese if desired.
