- 4 salmon fillet
- 2 tablespoons olive oil
- 1 lemon
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup dry lentils
- 2 cups vegetable broth
- 2 carrot
- 1 zucchini
- 1 red bell pepper
- 2 cups spinach
- 1 cup plain yogurt
- 2 clove garlic clove
- 2 tablespoons fresh dill

Preheat the oven to 375°F (190°C).

Season the salmon fillets with 1 tablespoon of olive oil, juice of half a lemon, salt, and black pepper.

Place the salmon fillets on a baking sheet lined with parchment paper and bake for 20-25 minutes or until cooked through.

While the salmon is baking, rinse the lentils under cold water.

In a medium pot, bring the vegetable broth to a boil. Add the lentils and reduce to a simmer. Cook for about 20-25 minutes or until tender.
