Ingredients
For 4 servings
- 600 g salmon fillet
- 400 g frozen spinach
- 200 g cream cheese
- 50 g parmesan cheese
- 2 clove garlic
- 2 tbsp olive oil
- salt — to taste
- black pepper — to taste
Instructions
- 1
Preheat oven to 200°C (400°F).
- 2
Thaw and drain the frozen spinach, pressing out any excess water.
- 3
In a skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant, about 1 minute.
- 4
Add the spinach to the skillet and cook for 3 minutes until warm and any remaining moisture has evaporated.
- 5
Stir in cream cheese, salt, and black pepper. Cook until cream cheese is melted and well combined with spinach, about 2 minutes.
- 6
In a baking dish, spread the spinach mixture evenly.
- 7
Cut the salmon fillet into four equal portions, season with salt and black pepper, and place on top of the spinach mixture.
- 8
Sprinkle grated parmesan cheese evenly over the salmon.
- 9
Bake in the preheated oven for 10-12 minutes until the salmon is cooked through and the top is golden brown.
