Ingredients

  • 4 eggs
  • 4 corn tortillas
  • 1 cup canned black beans
  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 2 tomatoes
  • 1 jalapeño
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 lime
  • cilantro — to taste
  • salt — to taste
  • black pepper — to taste
  • 1 cup cheddar cheese
  • 1/2 cup water

Instructions

    Dice the onion, tomatoes, and jalapeño. Mince the garlic.

    Heat 1 tablespoon of olive oil in a pan over medium heat. Sauté the onion and garlic until fragrant.

    Add the tomatoes, jalapeño, cumin, oregano, salt, and pepper to the pan. Cook until the tomatoes soften.

    Blend half of the cooked mixture with 1/2 cup water until smooth, then return to the pan. Simmer until slightly thickened.

    Rinse and drain the black beans. In a separate pan, heat 1 tablespoon of olive oil and cook beans until warmed through.

    Heat tortillas in a dry pan over medium heat until soft and pliable.
