Ingredients

  • 4 sweet potato
  • 2 cups kale
  • 1 onion
  • 1 bell pepper
  • 3 tablespoons olive oil
  • 3 cloves garlic
  • 4 eggs
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • salt — to taste
  • black pepper — to taste
  • 1/4 cup fresh parsley

Instructions

    Preheat oven to 400°F (200°C).

    Peel and dice the sweet potatoes into small cubes.

    Chop the onion and bell pepper into small pieces.

    Mince the garlic cloves.

    In a large, oven-safe skillet, heat 2 tablespoons of olive oil over medium heat.
