Ingredients

- 500 g potato gnocchi
- 400 g canned lentils
- 200 g spinach
- 200 g cherry tomatoes
- 2 tbsp olive oil
- 2 cloves garlic
- 50 g parmesan cheese
- salt — to taste
- black pepper — to taste
- 2 tbsp lemon juice

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the gnocchi to the skillet and cook for about 5 minutes, stirring occasionally, until golden brown and slightly crispy. Remove gnocchi from the skillet and set aside.

In the same skillet, add the remaining olive oil and minced garlic. Sauté for 1 minute until fragrant.

Drain and rinse the canned lentils, then add them to the skillet along with the cherry tomatoes. Cook for 3-4 minutes until the tomatoes start to soften.
