- 1 cup all-purpose flour
- 2 egg
- 2 cups panko breadcrumbs
- 0.5 cup vegetable oil
- 1 onion
- 1 carrot
- 1 potato
- 2 cloves garlic
- 2 tablespoons curry powder
- 2 cups chicken broth
- 1 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 4 cups cooked white rice
- salt — to taste

Season chicken breasts with salt and black pepper.

Coat each chicken breast in flour, dip in beaten eggs, and cover with panko breadcrumbs.
